6 medium roma tomato plants (20 oz), seeded and diced
1 cup chopped red-colored onion, chopped
1 large or 2 small jalapenos, seeded and chopped (1/4 cup. Leave seed products if you want warmth)
3 medium avocados, semi-firm but ripe, peeled, cored and diced
3 1/2 Tablespoons of essential olive oil
3 Tablespoons of fresh lime juice
1 clove garlic clove, carefully minced
1/2 teaspoon salt (pretty much to taste as preferred)
1/4 teaspoon freshly ground pepper
1/2 cup loosely packed cilantro leaves, chopped
Place the red-colored onion inside a strainer or sieve and rinse under awesome water to get rid of harsh bite. Drain well. Increase a mixing bowl together with diced tomato plants, jalapenos and avocados.
Inside a separate mixing bowl whisk together essential olive oil, lime juice, garlic clove, pepper and salt until mixture is well combined. Pour mixture over avocado mixture, add cilantro then lightly toss mixture to evenly coat. You can serve with tortilla chips .
