A recipe for this delicious Avocado & Grapefruit Kale Salad which is super healthy and yummy!
3 cups kale leaves, shredded
1 avocado, sliced
1 pink grapefruit, sectioned
1 tablespoon fresh-squeezed grapefruit juice
2 tablespoons fresh-squeezed orange juice
1 clove garlic, minced
1/2 cup olive oil
Fresh ground pepper
- First, make the vinaigrette by combining the grapefruit juice, orange juice, garlic, salt and pepper in a small bowl. Let this mixture stand for about 10 minutes, then slowly whisk in the olive oil and set aside.
- Place the kale leaves in a large bowl and drizzle with a small amount of the vinaigrette or olive oil. Massage the leaves with the olive oil or dressing for a few minutes, or until they begin to break down a bit and become more tender.
- Lightly toss the kale with the avocado slices and grapefruit.
- Drizzle with the vinaigrette and then serve on a cold plate.
