1 bulb fennel, sliced & trimmed
2 large oranges cleaned and sliced
1 tablespoon red wine vinegar
2 bunch arugula rinsed, well dried and chopped
This salad needs no more then 10 minutes and will be ready in under 30 mins. Start with placing the orange and fennel in a medium to large bowl. Then drizzle some olive oil and vinegar, sprinkle poppyseeds and salt over. Chill it and serve over a bed of arugula, done !
